Cooking spray (or 12 paper baking cups)
1/2 cup (1 stick) butter
2 eggs
1 cup of milk
2 cups all-purpose flour (for even finer taste you can substitute 1/4 cup of the flour for finely crushed Graham cracker crumbs)
3/4 cup brown sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup semi-sweet chocolate chips
How to?

1. Preheat oven to 350°F
2. Sift together the flour, baking powder, sugar and salt into a large bowl
3. Lightly beat the eggs in a large bowl, add in the milk and butter.
4. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients and stir very gently and don’t overmix for that fluffy taste.
5. Arrange the mix in the baking cups
6. Bake for 15 minutes and take them out unfinished
7. Place 2-4 mini marshmallows into the tops of the muffins
8. Put them back in the oven and bake for an additional 5-10 minutes.
9. Let them cool for a bit and serve this delicious muffins.
